De pronto, un día caluroso, antecedente de otro nublado y húmedo, en el tráfago de los viajes y el tiempo, abrí los ojos al planear en Tabasco, en Villahermosa. La pequeña ventanilla me ofreció un saludo de luz, clorofila y agua. Qué hermosa naturaleza la de este Estado. Admirable belleza que contrasta con los magros alcances de su historial cívico reciente. Qué pesar que los ciudadanos tabasqueños no hayan logrado arrancar las garras de quienes, como garrapatas gordas, han depredado su riqueza por años; en su última etapa, nada menos que ochenta. Causa ésta, de la primera y más clara evidencia de la contradicción en que vive el habitante mayoritario de estas tierras y que de inmediato salta a la vista: pobreza, en medio del exuberante prodigio natural. Como si las nuevas generaciones, una tras otra, cada vez emprendieran la meta de la reproducción del sistema decadente, no su transformación.

Como quiera que se llegue a esta zona de México, el ombligo de su Golfo, el exultante ecosistema expresa de forma abrumadora su abundancia. El agua incontenible, vaciada multiforme (río laguna arroyo charco pantano rocío mar…), y la infinita variedad de verdes como fondo y subrayado de la pluralidad de colores. Carlos Pellicer y José Carlos Becerra (no así José Gorostiza, sino acaso por contraste; a excepción de Canciones para cantar en las barcas, sólo quizá, como un eco de infancia) explican mucho de sí mismos como poetas emergentes de esa naturaleza.
Cerca del aterrizaje y semiembriagados los sentidos de tanto verde y tanta agua, alcancé a recordar cierto debate en el cual participé hace pocos años sobre un interesante caso en los Estados Unidos. La demanda de McIlhenny Co., productora de Tabasco Sauce, contra el pequeño Tabasco’s Mexican Restaurant & Patio,instalado en Iowa, a la mitad del medio oesteultraconservador, por considerar que infringía su marca registrada (Trademark) al usar un nombre propiedad de la compañía y dañar así sus intereses. Demandaba a los jueces que forzaran al restaurante a la remoción del nombre, destruir todo lo que utilizara el título Tabasco y que pagara por los daños causados. Los propietarios del restaurante alegaban no sólo el apóstrofo incorporado, sobre todo, el haber tomado como inspiración el nombre del Estado de Tabasco en el Golfo de México, de donde presuntamente eran originarios.
Debate entre quienes defendían el derecho de la corporación a proteger marca y nombre del cual es “propietaria” desde 1868, contra los simpatizantes de los prácticamente indefensos restauranteros. Era necesario conocer entonces los orígenes de ambos Tabasco. Y es claro que el Estado antecede a la salsa al menos por 400 años.
Tabasco es la zona geográfica del florecimiento y máxima expresión de la cultura Olmeca (sobre todo en La Venta, junto con el sur de Veracruz), la primigenia de toda huella civilizadora en el continente americano. Aun cuando haya desaparecido y más allá de los vestigios monumentales de cabezas, monolitos y jaguares, la gente que vivió entonces aún persiste, mezclada después con los mayas, las incursiones mexicas, los españoles, los franceses y, finalmente, el resto de los mexicanos. Una de las sorprendentes características de esta zona es la habilidad del individuo para la sobrevivencia en un ambiente que puede llegar a ser intolerante e inhóspito, por su condición terrena y climática de sol, pantano, humedad e insectos. No obstante, la riqueza abundante de la naturaleza, crea arraigo.

La Malinche, que tanta resonancia alcanzaría en el nivel psíquico y cultural de los mexicanos. Al parir a Martín Cortés, el primer mexicano, pariría el futuro de una nación progresivamente mestiza (aunque, en realidad, el primer antecedente del mexicano actual quizá sea algún hijo de Gonzalo Guerrero que, tras un naufragio en 1511, se adaptó a la vida de los nativos mayas de Yucatán, procreó familia, se negó al rescate por parte de los españoles al mando de Cortés – que sólo aceptó Gerónimo de Aguilar, otro náufrago-, a quienes incluso, como jefe maya, combatió hasta que fue muerto por éstos en 1536). Estos antecedentes, por si no bastaran los arqueológicos, registran el sitio y el origen del nombre Tabasco. Como en toda disputa de significados, aquí no hay excepción, cohabitan varias explicaciones al respecto. Para el caso que nos ocupa, no obstante, es clara la existencia prehispánica de la cultura y el nombre.
Existen dos versiones sobre el origen del chile que es fuente primaria de la salsa tabasco. 1) Durante la invasión estadounidense a México -que duró con la bandera gringa flotando en el zócalo por ocho meses y que terminaría con el doloroso cercenamiento del país; Tabasco mismo fue invadido, pero los gringos fueron derrotados por los locales logrando sólo ocupar por ocho meses el puerto principal, Frontera-, dentro de la expedición ocupante en Tabasco, un soldado que encontró y degustó los chiles de la región, los traería de vuelta consigo y los obsequiaría o vendería a Edmund McIlhenny, un banquero. 2) Un conocido o pariente de McIlhenny, en viaje por Centroamérica (Tabasco es parte de la geografía referida), de regreso a los Estados Unidos cargaría con los chiles y se los daría a probar a McIlhenny. Acto seguido, Edmund, que gustó de ellos, los sembró en el huerto de su esposa en Avery Island (que en realidad no es isla), en Louisiana. Los consumieron familiarmente y los compartieron con amigos por muchos años, hasta que poco a poco nació y creció la idea de comercializar el chile en una salsa que combinaría además, la sal de la isla y un excesivo sabor avinagrado producto del encurtido embarrilado. En 1868, McIlhenny comienza el gran negocio que hoy encuentra en las mesas del mundo, guste o no, su expresión en botella.
Edmund McIlhenny se apropió también del nombre del Estado del que procedían los chiles y lo registró como propio. Hoy los chiles se llaman Tabasco Peppers, pero en realidad no hay tal, se trata del Capsicum frutescens, consumido en Tabasco aún hoy -junto con el chile “amashito” y el habanero-, y conocido como “pico e’ paloma”, dada la forma cónica y la brevedad del chile; como la del pico de las palomas. Hacia 1970, el NMSU’s Chile Pepper Institute desarrolló, como oposición y opción a los McIlhenny, otra variante del mismo chile y con la misma raíz, el Greenleaf Tabasco.
El conflicto. La compañía ejerce presión para preservar “incólume” el nombre, cuando en realidad, legítimamente, por condición ética e histórica, no le pertenece, aunque tenga un registro legal. Cosa normal es que los inmigrantes del mundo nombren sus negocios con la identidad de su origen, a manera de memoria y orgullo. Pero la compañía McIlhenny tiene mala reputación. Ha llegado al absurdo de tener “clientes secretos” y “consumidores ocultos” que, al entrar a algún restaurante, solicitan Tabasco Sauce y en los casos en que se les ha ofrecido un sustituto, han procedido a demandar al lugar. ¡Qué bellaquería!
Me pregunto qué sucedería si México tuviera el impulso de fructificar sus riquezas. Si existiera el apoyo oficial para ello o cuando menos el estímulo. Si existiera un interés genuino en la producción del campo y, aún más allá, su vinculación con la producción industrial. ¿Quién podría detener que en Tabasco se produjera (mi idea y mi propuesta) “La verdadera Salsa Tabasco”? Ni siquiera McIlhenny Co. podría desbaratar esa publicidad; cuando mucho, en todo caso, sólo en Estados Unidos, mas queda el resto del mundo. Producir una salsa que compitiera contra ese desagradable sabor salado y desproporcionadamente avinagrado que ha distorsionado el sabor original. En Tabasco se elabora ahora una muy buena salsa que se puede encontrar cuando menos en la ciudad de México, la poética Chimay, de chiles habanero (que imprime en la botella un fragmento pellicereano de “Estoy todo lo iguana que se puede”), pero me parece una estupenda idea recuperar el sentido del chile “Pico e’ paloma” como “El sabor original de la Salsa Tabasco”; algo así, como promoción.
Con el tiempo me desentendí del debate al cual entré por la confusión a que se ha prestado el nombre Tabasco en las diversas regiones del mundo e incluso en México. Siempre he aclarado con responsabilidad los puntos. Y aunque no he conocido el final de la historia entre la salsa y el restaurante, esperemos que no haya prosperado la estulticia (en una extraordinaria coincidencia, antes de revisar este escrito veo un programa de tv europeo que propone, como “trivia”, identificar cuál especia, de las cuatro mencionadas, no se encuentra también representada en el mapamundi universal. Los concursantes dudan entre orégano y “tabasco” –en sus sentidos, convertida esta última ya en mera especie-; eligen “tabasco”, equivocándose. La correcta era la primera opción, las otras dos eran madeira y roquefort).
Pasado el mediodía, mientras tanto, el descenso aéreo se consumaba. Pronto tendría una comida en la que, acompañando los platillos locales (puchero de res, variedad de expresiones del pejelagarto, piguas, pochitoque, chiquiguao y otras tortugas -cuidado, que están en peligro de extinción-, tamales múltiples, horneados, mones, chaya, chipilín, yuca, plátanos y demás –la extraordinaria Diana Kennedy, responsable experta conocida como “la reina de la cocina mexicana”, ha elogiado en The New York Times a la tabasqueña auténtica por su exotismo y singularidad en el sabor), muy probablemente disfrutaría de una salsa natural de chiles “pico e’ paloma” –y de la no menos apetecible de “amashito”-, y así reencontrar, recreándolo, el sabor veraz que dio origen a la confusión desde hace más de 160 años, ahora contenido en el nombre de una salsa y de una tierra.
